butterscotch crackle cookies

Over the holiday break a couple of months ago, Auntie Em came over to make cookies with K & T. These butterscotch crackle cookies seem like an odd combination of ingredients, but they make a yummy, moist cookie.  Plus, they are really easy to make!

rolls Pillsbury® refrigerated sugar cookies

cups Wheaties® cereal, crushed to measure 1 cup
1
cup butterscotch chips
1
cup coconut
1/2
cup powdered sugar

  • Let cookie dough stand at room temperature to soften slightly.
Gather the cutest helpers you can find.  
 Heat oven to 350°F. Spray cookie sheets with cooking spray. In large bowl, break up cookie dough. 
Have your local handyman crush the cereal with a hammer.

 Stir or knead in crushed cereal, butterscotch chips and coconut until well blended. 
This may take a lot of hands to get done.
 Shape dough into 48 (1-inch) balls; roll in powdered sugar.
The powdered sugar part may be a bit messy, a handsome assistant might be needed.

On cookie sheets, place balls 2 inches apart. Slightly press down balls with the bottom of glass to make an even top. Bake 11 to 15 minutes or until edges are golden brown. 
While cookies are baking, watch silly videos on youtube as a family. 
Cool 1 minute; remove from cookie sheets to cooling racks.
Invite Nana & Papa over for cookies and serve them warm cookies with milk.
