Fruity Baby Muesli

Mr. T has become a great eater, he has found a favorite food called muesli.  I ate a delicious version of this as a teenager with a dear friend of mine in Switzerland one summer.  Making this brought back such good memories!    I usually double it this recipe because he eats it most mornings, and it keeps well in the fridge.  We sometimes add applesauce or formula to it to loosen it up after warming it for a few seconds in the microwave.   Andy said he would eat this himself for breakfast this winter it's so good!

Fruity baby muesli
(This recipe is from a kids' cookbook that we have)

Oats raise blood sugar level relatively slowly, so oat-based breakfast cereals provide a more sustained energy boost than other cereals

Prep time: 10 mins, plus 2-12 hrs soaking, makes 2 portions, provides fiber, iron, magnesium, B vitamins (except B12), vitamin C, and zinc

1/3 c. rolled oats
1/4 c. toasted wheat germ (it comes toasted, I bought a jar of it at Jungle Jims)
1 dried apricot or pear, chopped
1 T. raisins
2/3 c. white grape juice or apple juice
1/2 red apple, peeled and grated (I just chopped it finely)
3 grapes, halved and deseeded

*Put the oats and wheat germ in a bowl with the dried apricot and raisins.  Cover with grape juice.  Leave to soak for at least 2 hours or overnight.
*Add the apple and grapes to the soaked cereal and blend.  (Once baby has mastered the art of chewing, there is no need to blend this muesli)

One content and happy baby.

K doesn't care for it, she's having a cereal bar and blueberries instead.  :)
